an easy thai inspired chicken soup for the whole family
Spicy Thai Chicken Soup for 4
This is a great way to get kids into Thai food as they can ‘build’ their own soup.
Ingredients
· 2 x Large Chicken breasts or enough mini fillets for 4
· 1 lime
· 1 stalk of ginger
· 2 cloves of garlic
· Cabbage leaves
· 2 shallots
· Bunch of coriander
· 2 tbsp White miso paste
· 1 packet of Coconut Cream
· Soya sauce
· Sesame oil
· Chicken Stock – no added salt
· 4 portions of Noodles
· 4 x Kaffir Lime Leaves
Method
Chop the chicken into chunky strips, then brown the chicken in a pan with the garlic, onion, and ginger using some sesame oil.
Once the chicken is browned, add the chopped cabbage until this too has softened.
Meanwhile boil the noodles in the chicken stock and miso and about 1 ltr water. Once the noodles are done, strain them making sure you keep the liquid.
Bring the strained liquid back to the boil and add the coconut cream, and kaffir lime leaves.
Once you are happy with the taste (you can add chillies at this point if you wish) add the chicken and noodles back to the pan and heat through.
Add fresh coriander leaves, and a squeeze of lime then serve immediately.
You can have bowls of toppings waiting on the side so the kids can add their own extras. Here are my suggestions…
